Cooking for daily meals has to be easy, quick and healthy. Pan fried salmon with crispy skin is one of delicious fish dish to have. It is suitable for adults and also for young children.

Crispy Skin Salmon with Sweet Rosti
2 Salmon fillets with skin on, 145 g each
2 tablespoons olive oil
1 tablespoon chopped mixed fresh herbs-chives, dills
Salt to taste
Sauce: herb lemon butter
– lemon juice, fennel and chive
1 small sweet potato, peeled and grated
1 medium potato, peeled, and grated
Salt to taste and some fresh thyme
2 tablespoon oil to pan fry the rosti
Cooking The Salmon
Place the two salmon fillets in hot oil, skin side down
Cook for 1-2 minutes then turn them over cook for 1 minute
Turn them over once more to crisp up the skin, cook over lower heat for 2 minutes
In the mean time you have to organise the rosti.
After two minutes, take them out to rest until serving time. In this case after the rosti is cooked.
The sauce: deglazed the pan with water or fish stock, add lemon juice and fresh herb, and bring to simmer.
Take it off the stove, add in two cubes of butter, and stir until the liquid become smooth and buttery.
(add olive oil instead of butter if you wish)
Cooking The Rosti
Place the grated potatoes in a bowl, add in the herb, salt to taste, and mix well together
Shape them into small balls; flat them out to make a large round
Pan fry for two minutes each sides until cooked and crispy the outside.
Serve at once to garnish the salmon
On a plate, pour some sauce, place the salmon on, skin up to keep it crisps.
Garnish with the sweet rosti and vegetables that you like
