Steamed Cup Cakes
Steamed and delicious cakes for us all. This is one of my favourite little cakes, I have been trying to cook without any success, but today I did it and am pleased to show you off. I believe the cake delights everyone and it is not only pretty but healthy too, there is no egg, no oil or butter. We shall enjoy it, served with tea or coffee and it is perfect for snacking.

Cup Cakes for Angels
1 cupfull rice flour
½ cup raising flour
2 teaspoons baking powder
¾ cup white sugar
½ cup water
½ cup soda water
a pinch of salt
Food colouring: yellow, pink or other colour.
Get a steamer ready, and oil the mini cups
Mix all the ingredients together to make smooth pouring batter
Add the food colouring, and mix thoroughly
Pour the batter into the prepared cups, about two third full
Put the cups in the steamer
Cover the steamer, and cook for 25 minutes without disturbance.
Don’t get ever tempted to open the cover of the steamer, because it makes the cake not open up properly.
When they are cooked, transfer on a plate to cool.
Loosen up the cake with a knife, get it out of the cup when they are cold.
Serve warm or at a room temperature.
I think these pretty mini cup cakes delights the children, grand kids, those all our precious Angels. And of course they are good for us adults too.
