HAPPY CHRISTMAS AND HAPPY NEW YEAR 2016

We had a family together to celebrate Christmas, and we had a lovely Day and a happy Boxing Day.  We were blessed with our children and grand children, and were so proud to see them happy, healthy and enjoying the festivity.  On that note I wish to say thank you for your presents but specially your presence.  God Bless You All.

Today is a New Year’s Eve we are spending time together at home, and the children and the grand children are at their own home and are happy enjoying the rest of their holiday and the last day of the year.
It is a very hot day today, but I managed to gather some flowers, some of the last blooms from my garden to celebrate the end of the year and to welcome the new year.

We had a Happy Christmas and I hope you all did.  Now keep it cool and enjoy the last day of the year.

Bread – Home Baked

Baking bread is a challenge but fun.  I baked crusty bread with avocado and natural nuts.  No I don’t have the recipe, but I simply prepared it with the thought by the end of it,  I will have a good warm bread from my kitchen.

Preparation and the baking of the bread was good,  I love working with the dough, particularly a yeast dough.

The crust was crusty, the bread was hard-firm to touch, but soft and smooth in the middle, it’s different to the commercial bread, as you know that all crusty bread have soft, airy and fluffy crumb and the texture is always strong not brittle.  However, the family loved the bread, and it was delicious to have them toasted for the next day.

Bread goes well with salad, they accompany each other very well.  I am so lucky to have a small vegetable garden, and right now there are a lot of greens and herbs growing.
French Bread.
Boule is the famous French bread, I could not succeed to bake French Baguette just yet as it is very difficult for home baking.  I tried to bake the Boule, and it was good and I said, you don’t need to go to Paris to get fresh Boule, but I could get it in my own kitchen.

Boule Bread
To bake 2 loaves weight at 500 g each
4 cups strong flour
1 tablespoon salt
1 tablespoon active dry yeast
2 cups warm water
Extra flour for dusting
You need also: 2 baskets and cloths for shaping, baking paper, baking stone to bake.
Bake in a very hot oven at 200 degree C (fan forced oven) for 35-40 minutes.
Note: the process of making the dough, do as you would for making pizza dough, but the dough should be wetter and softer.


No Knead Bread.
I wish to bake sour dough bread, but I don’t have the sour dough starter and I am not ready to make sour dough starter by myself which is easily to achieve as I was told.  Anyway this no knead bread is close enough to the sour dough bread, may be not the taste, but at least the look.

The Preparation for the Dough.
100_4843100_4845 100_4847 What you need are flour, yeast, salt and almost warm water.  It is very simple.100_4849Let the dough rest and to proof until doubled in size as long as it takes.  Cover the bowl first with plastic, then with the cloth.

Long Skinny Bread.

1 cup warm water (almost cool), not too warm
1 teaspoon yeast and 1 teaspoon salt
(Place in a bowl, stir gently)
Put about a cup full plain flour in the yeast mixture, and stir it with wooden spoon until all combined to make a soft and wet dough, if it is too runny, you can add a little more flour.  Cover the bowl with plastic, and a cloth,  let it rise for over night.  Make the preparation at night time, so the next morning you could have freshly baked bread for breakfast.
In the morning what you have to do is take the dough out of the bowl, place on a working place.
Pat it gently and cut into two,  then stretch into longish shape and place on a baking tray.
Let it stay to proof for the last time before baking for one hour.
Bake in a very hot oven at 225 degrees C for 22 minutes.
Before Baking:
Dust the dough with flour, and score four times diagonally on each.
Place a tray of hot water in the oven, then put in the ready dough to bake.
(the steam will create a good crust for the bread)
Let the bread cool on a cooling tray before cutting.

100_4842Slice, cut the bread whe n it is cool enough, serve with butter or simply dip in olive oil.
A salad that good to go with this bread is a good leafy salad with fried thick bacon dressed with mustard dressing, garnished with soft boiled egg.

I will try myself to bake no knead dough rolls, and serve them for breakfast. I have to plan when I have to start to make the dough and bake it in time.
