Morning Tea

Yesterday the biggest morning tea was held at our sports club. It is a yearly event to raise money for the Cancer Council. I do participate every year, and I was lucky enough to be there and shared my home baked, and they were savoury and sweet.

A savoury dish – mini corn and ham muffins.  And a sweet-it was a butter cake which decorated with pink buttercream icing.  The muffin was delicious and the butter cake was flavoured with raspberry that made the cake very moist.

There were a lot of variety of sweets, from traditional slices, scones, cream puffed and cup – cakes.  People are always generous, they brought their home baked for their special morning tea.  Indeed. it was a delightful spread we had.  I hope we did raise enough money to donate to the Cancer Council.

It is good to have little savoury and freshly baked.  Serve as they are or dressed to make a fancy platter.
I did fill the muffins with sliced avocado mixed with fresh chopped herbs.  The fresh and the creaminess of the avocado add the taste of the muffins perfectly.

 

I have the recipe to share, it was based on other recipe but I changed a little,  but it worked.

Mini Corn and Ham Muffins
Based on other Recipe
Makes: 36

Ingredients
2 cups self-rising flour
1 tablespoon chopped fresh chives
1/2 cup milk 2 eggs
1/2 cup vegetable oil
85 g shaved ham,  finely chopped
100 g grated tasty cheese
125 g creamed corn

Method
Preheat oven to 175 degrees C (fan forced)
Grease 3×12 hole mini muffins

Combine flour, chives, and ham in a bowl.  Make a well in the centre
Add milk, egg, oil, cheese and corn.  Mix until just combined.
Season with pepper and salt, spoon mixture evenly between holes of prepared pans
Bake for 16 minutes until golden and just firm to touch.
Stand in pans for 5 minutes.  Turn onto a wire rack to cold.

Serve warm or cold.
