To have fresh vegetables from the garden is a treat, but spring to summer I relay on our fresh lettuces from the market. I never have succeeded to plant lettuces during summer season. It is too hot to garden and with salad greens you need a lot of water, I could not afford to do it. However last spring I have managed to put mixed lettuce seeds in, and they grow to seedlings. In fact I shared some of them with friends. I planted the seedlings in a pot and also in the ground. They did not do badly, it has been reasonably good harvests.
I picked some fresh lettuces this morning before the summer heat got onto them, and some roses for the house.
The lettuces are for my summer salad, what I need is to make the dressing. Another summer salad is cabbage salad, it is one of my favourites.
My Summer Salads

Leafy Greens and Avocado Salad
Ingredients:
Mixed lettuces
1 Avocado, peeled and sliced
1 tablespoons almonds flakes
The Dressing
1/3-cup olive oil
1-teaspoon mustard
Juice of half lemon
Salt to taste
Place all ingredients in a bowl and whisk them together to mix.
Cabbage Salad with Mustard Dressing
2 cups shredded cabbage
1/3 cup shredded carrots
½ red apple, sliced into strips
Dressing
¼ olive oil
1-teaspoon whole grain Dijon mustard
Juice of half lemon
A pinch of salt
Mix all ingredients together, place it in a jar and refrigerated
I love to serve my cabbage salad with Pork roll in pastry. It is lovely combinations as the sliced pork roll is delicately flavoured in a rich pastry and the fresh cabbage salad neutralizes the richness of the pork roll.
